Limoncello and ginger beer recipe

Ok, so last time I made Limoncello I thought it need something else to give it a bit of a "kick" and I love ginger so here's the recipe:
750ml of 80% proof Vodka
6 lemons zest to soak in it for around 12 days.
Boil 3 cups of water, 1 cup of sugar and 2 tbs of fresh grated ginger in a pan for a few minutes.
add together, strain and bottle. Store in a fridge before consumption and be careful as it can go straight to your head!

I love this recipe but it seems a bit of a waste of 6 lemons and I had ginger left over. I absolutely adore ginger beer so this is what I done yesterday and I think it tastes stunning... If I do say so my self! :-)

pour 1 cup of sugar and 1/4 tsp of yeast into an empty 2 litre plastic bottle
Add 2tbs of fresh grated ginger and the juice of 1 lemon and then fill the bottle 3/4's full with water and SHAKE until the sugar has dissolved. (Please put the bottle cap on before shaking as I forgot to do this when making pancakes once and what a mess!)
continue to fill the bottle until 1 inch from the top and store in warm place (airing cupboard) for around 24 hours or until the bottle becomes very hard. Be aware that if you leave it longer than 24 hours the bottle could burst! - then store in the fridge and strain into a glass to drink! - Yummmy!

  1. Sounds wonderful! We must make some more cider. We used Wilkinson's tinned kit...tasted like champagne so we have got to make some more.

We picked this one because we found that blackberry bushes will only grow on fertile soil - so that was a good start. It was scary seeing all this work ahead at first but so exciting

The first day

Well we got the allotment on a sunny wednesday, 2nd week of June. Saturday came and I was up early in the morning and devastated to see it was pouring down outside. The rain settled at 1:30pm and I have never got my wellies on so fast! The men up the allotment also thought I was crazy as I kept working in the rain as I was so determined!

I was really worried about disturbing any wildlife. Unfortunately these little eggs did not survive even though I re-placed them to the bottom of the allotment in the bushes. Next year I will be doing what I can to attract some of the wildlife back, building homes for the hedgehogs and ladybirds and I am going to place some large stones around my bath and protect it as there are newts living in there and frogs that come and go.
